The Overnighter is mumma bear’s take on a bircher-style muesli. It is made from southern nz rolled oats and extra oat bran, with apricot, cranberry, and sunflower and pumpkin seeds and just a small amount of dark brown sugar to lift the flavour.
To prepare the overnighter, mix together ½ cup dry mix, 1 grated apple (skin included) and 1 cup natural yoghurt. Leave overnight. The next morning – voila!! Delicious breakfast – add some extra berries and nuts as desired.
For that special look, overnighter can be served a tall glass with layers of fruit and a berry on top!
It works well as a hot porridge too!
